bbq rosemary trout

Take whole small trout (or other small fish, or fillets with skin on). Season well, rub all over with olive oil and stuff cavity of each with some lemon slices and a large rosemary sprig.

Grill over a prepared charcoal fire, adding lots of green rosemary branches to give plenty of smoke, until skin is crispy and flesh just cooked though. It won’t take long.
